His early career took him across Ukraine, Romania and Turkey, analysing logistics corridors, vessel line-ups and currency volatility. At Olympic Oils he leads all edible oil market forecasting and advises on forward-cover strategies — aided by a colour-coded spreadsheet that no one else is permitted to edit.

Tom’s professional origin story begins in Southern Spain during a tomato processing season so intense he claims he could estimate Brix levels by smell alone. With a background in Food Supply Chain Management and deep expertise in QSR demand elasticity, Tom built his career at the intersection of agriculture, processing capacity and consumer preference.
At Olympic Oils, Tom specialises in tomato paste pricing, reformulation trends and ingredient specification shifts driven by cleaner-label demands. He maintains a dynamic dashboard tracking crop outturns in Extremadura and Parma, alongside an alarming number of tabs dedicated to sugar reduction legislation.

May entered the industry through food science, specialising in emulsion stability and lipid-protein interactions. Her postgraduate research focused on shelf-life optimisation in high-volume mayonnaise production — a subject she describes as “more exciting than it sounds,” and then proceeds to prove.
Before joining Olympic Oils, May worked with large-scale manufacturers navigating volatile egg pricing and fluctuating oil inputs, developing formulation-adjustment frameworks to maintain margin without compromising texture or mouthfeel — a balancing act she calls “the art of structured creaminess.”
